Technically? Yes.

Legally? Not so much.

I don't know, but I assume that the majority of paid-for Kindle books are protected with DRM. Regardless of Copyright considerations, the Amazon Kindle terms of use forbid modifying downloaded books to remove the DRM. It's also illegal under UK law (I think... but I'm not a lawyer...)

There are utilities that can strip the DRM and then it is straightforward to convert the Amazon format (based on MOBI) to EPUB format used by the Nook.
