Removing app icons from the home screen (and adding new ones)

I've just bought the new 7" Fire, and like most computers, much of what I see I like, but there are aspects which drive me mad.  To the subject. How do I remove unwanted icons from the Home screen, and replace them with others. As a 'frinstance, I'm 80 years old. What need have I for "Kindle for Kids"?, Or "games.". On the other hand, I would like to see the app for my DJI Phantom quadcopter.. Tap and hold on the unwanted app does nothing.

Well, one thing has become apparent since my post. After years of having things sliding from side to side, I find the the Fire slides up and down (sighs). So the apps I put on were there, but hidden below the bottom of the scree. So only the removal bit needs to be addressed.

tap and hold the icon ,then choose option remove from device !

Except that tap and hold does not remove, or enable removal of the icon only from the view. For embedded apps, it offers  a move to a fresh location on the page. For added apps the options are the same plus uninstall. All I want to do is to remove unwanted icons to reduce the clutter. However, whilst not a cure, I find that I can lump all the unwanted icons in a 'volume', and so remove them from direct view. Android allows removal, why not here?
