Meaty Sausages

Since my last thread on bangers was a veggie one, I'll do another Smile

For my B'day (Oct') We decided to treat us to a Kmix stand Mixer.
We discovered we could get a meat grinder/sausage maker attachment for it.
So we saved and saved and saved our Amazon vouchers until we could get one.

Then we spent a small fortune on meat (way more monies than we would normally spend on sausages in a year Smile), and decided to give it a go.
Making sausages is really quite easy, satisfying and you know what's in there!
Over 2 days we made 72 sausages, most are still in the freezer.
Never knew sausages could be so meaty, our first attempts were 99% meat, the rest seasoning. Solid sossies, but yummy too.

Our next attempt we tried onion and apple as well as stuffing along with the pork, so around 70% meat content.
We also did a variety with chilli and tomato.
These made melt in the mouth texture bangers.
This time we made around 40.

So today We went to Sainsburys as we had a £5 off £20 voucher and went mad and spent it all on venison for venison sausages.
So another sausage making session tomorrow. WooHoo! Smile

Funnily enough I'm making sausage casserole for tea tonight.
I like Richmond sausages and these were frozen ones as I haven't been shopping since getting back from hols, so casserole with baked potatoes for me.

I don't like fancy sausages with bits in them, but you r sausages look gorgeous.
Hedgehogs rock.

RE: Meaty Sausages

We've made some special Danish sausages several times around Christmas, though not recently. It was a tradition where my father came from. We got the proper casings (pig's intestines) from the butcher, but the last time (a while back), he was a bit reluctant. He wasn't allowed to sell them, apparently, just use them for his own sausages, so we got them for free. You can get artificial casings, too, and I'd imagine they are easier to source.
