This is the recipe for the cake I had in the Courtauld today - and it was utterly delicious.

300g sr flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
ground cinnamon
240ml sunflower oil
300g Muscovado sugar
4 eggs
200g beetroot
100g raisins
40g linseed
30g pumpkin seeds
30g sunflower seeds

Mix dry ingredients. Mix oil, sugar, eggs and fold in dry ingredients. 2lb loaf tin and 325F or 160c for 50mins.

Icing: 100g icing sugar 20ml water. Sprinkle extra seeds (poppy/ pumpkin and sunflower) on icing.
Enjoy!

Goodness, I'd like you lot to come round and cook for me. I'm going to contribute the meal I make when I'm hungry and want something quick made from what's in the fridge.

Boil the kettle and put on some rice. If you have bacon, grill it. The bacon's pretty important, actually. Meanwhile, heat oil in a frying pan, and add chopped onion and garlic, and whatever of the following ingredients you have available; sliced peppers, mushrooms, chicken breast, chopped brocoli or fine beans. If the only meat you have is bacon, grate some cheddar. When the rice is done, stir it into the contents of the frying pan. Add an egg if you feel you need the protein. Tip into a bowl and add the cheese; grind pepper over it.

Should take under twenty minutes.

This is something I like to make on a Saturday evening.
It's my version of a middle eastern dish: shawarma.

You will need;

500 grams of diced pork- use scissors to make them into strips
0.5 tsp cayenne pepper
0.5 tsp cinnamon
1 tsp ground cumin
0.5 tsp nutmeg
0.5 tsp salt
0.5 tsp curry powder
0.5 tsp ginger powder
0.5 tsp turmeric
0.5 tsp black pepper
0.5 tsp ground cloved
1 tsp paprika
1 tsp ground coriander
0.5 small bunch parsley, chopped
3 garlic cloves finely chopped
iceberg lettuce, washed and cut into strips
frozen pepper mix, about 1 big hand full
1 big onion, in quarters and sliced
reggae reggae sauce to taste
pita breads

For the garlic mayonnaise:

3 tablespoon of mayonnaise
juice of 0.5 lemon
0.5 small bunch parsley, chopped
3 to 5 garlic cloves, finely chopped
salt and pepper to taste

Take a big bowl and put the pork strips in there, add all the spices, the salt, the garlic, parsley, onion, peppers and leave to marinate for a bit.

Make the garlic sauce, by putting the mayonnaise in a bowl and adding the lemon juice, garlic, parsley and salt and pepper and put aside.

Put a large frying pan on the heat with a little olive oil. When warm, tip in the pork mixture and stir fry this until the pork is cooked.

In the meantime heat the pita breads as instructed on the pack.

Slice open the breads, put some lettuce in them and a little reggae reggae sauce, add the pork mixture.
Serve with the garlic mayonnaise

A mini indian steak feast

I was dead chuffed with how this turned out, and even MORE dead chuffed when it featured on Jamie Oliver's 30 minute meals a couple of weeks later! It really is quick and easy to prepare. I have added in the recipe for the dip from JO, which I recently attempted and it goes perfectly!

You will need:
  • Steaks (JO used rump steak and sliced it. I used diced braising steak. Both work)
  • Curry Paste - Balti is good, either Sharwoods or Pataks
  • 1-2 Lemons
  • Fresh Coriander
  • Olive Oil
  • Baby Spinach
  • Cress
  • Carrots
  • Sesame Seeds
  • Paneer Cheese (can't find it? Try Haloumi instead - works just as well!)
  • Carrot
  • Coconut Milk
  • Salt/Pepper
  • Naan Bread
  • Fresh Mint
  • Natural Yoghurt

1.Using about 1/4 Jar of your curry paste, some olive oil, juice of half a lemon and salt/pepper, prepare a marinade for the steak - rub it in well and leave it standing.

2. Wash the Baby Spinach and tear into a bowl, cut the cress over the top, and grate (using one of those speed peelers for great results) the carrot into strips over it. Cut the paneer (or Haloumi) into thickish slices and fry in a little olive oil - just as they start to turn brown, sprinkle with the sesame seeds. Once nicely brown put the cheese and any seeds from the frying pan in the salad. Squeeze the juice of half a lemon over it and drizzle of olive oil.

3. Prepare the Naan - sprinkle with water and either microwave or warm in the oven

4. Take the steaks out of the marinade and fry them off. Use the leftover marinade and about 1/2 Jar of your curry paste and a tin of coconut milk to make a sauce - mix together in a saucepan over a medium heat to thicken.

5. Once steaks are done to your liking slice (if necessary) onto a plate. Put the curry sauce into a separate bowl.

6. Serve up with the naan bread.

Now I thought that was pretty great - then add this tasty dip as well (for best results mix this up between steps 1 and 2 above, as the flavours have chance to develop then.

Pour natural yoghurt into a bowl and sprinkle over the torn up fresh mint, juice of half a lemon and a drizzle of olive oil. Stir all this together just before serving.

The only drawback is - you have 2 really nice sauces for dipping stuff in - but it doesn't matter - they complement each other really well.

I served this up to my girlfriend's family who, while they will quite happily go out for an Indian, would never think of cooking one at home. This went down an absolute storm with them!

I first had a muffelatta sandwich in New Orleans, in the French Quarter, where a little deli has been serving it up for nearly a hundred years.
