If you sort "By Collections" this does what you want.
Press Home, cursor to the the top of the list where is shows the number of books on the left and on the right the sort method. Cursor to the right and then select Collections
BTW I'm using a Kindle Keyboard so it may be a little different on yours

You can rename books outside of the Kindle using something like Calibre, but I found it messed up with purchased books and the Kindle sometimes complained the books were corrupt. You may have more luck now with Calibre but I gave up. Also to fix your first question you need to be sorting on collections which will then mess up the alphabetical sort anyway. I prefer to leave it on sort By Collections
I do use Calibre and am very careful to put what I want the way I want. I like it a lot and I'll work on the sorting side. Thanks again.
